Super Bowl Sunday & Potato Salad Recipe

Happy Super Bowl Sunday, everyone!

The following recipe is a mish-mash of various recipes and techniques that we gathered from multiple sources. Of course, potato salad isn’t exactly rocket science. It’s potatoes and mayonnaise. You add other stuff to it in varying degrees. It’s cheap and it isn’t hard. Ours is very simple and down to basics, which is how we like it. This is how we make it:

Rob & Holley’s Potato Salad

4 lbs. of white potatoes, peeled and diced into 1 inch cubes

These are boiled for about 15 minutes in salted water until they are tender.

While the potatoes are cooking, we mix together:

3 stalks of celery, thinly sliced

1/2 medium red onion, finely diced

1/2 cup pickle juice

4 tablespoons apple cider vinegar

4 tablespoons sugar

2 tablespoons yellow mustard

2 teaspoons garlic powder

2 teaspoons salt

1 teaspoon black pepper

After the potatoes are done, we drain them and let them cool off in the pot for about 30 minutes. Then we add them to the bowl with the other ingredients and mix them together by hand. It’s messy. Let it sit for another hour in the refrigerator. Then slowly add 1 1/2 cups – 2 cups of mayonnaise and mix it all together to the desired consistency of creaminess. It’s going to firm up some overnight, so don’t worry if it’s too creamy just yet, but definitely don’t overdo the mayo.

Anyway, today we’re having that along with some BBQ ribs and buffalo wings, so it should be a good day. And, it’s basically a holiday, so it’s cool to go off the diet, which is a good thing, because this stuff is loaded in the calories. Just wish we had more folks around to enjoy it with.
